I’m “electrically challenged”. Lol
What would this consist of? Please explain in the simplest form.

Here’s a pic of the transformer wiring. Btw I checked the volts coming out of the transformer and it was about 120.

120v is going into, NOT coming out. You need to reconfigure the input for 120v use.
This is clearly shown in the schematic. If you are unsure about doing this yourself, you will need to get someone who does.
This is mains voltage and needs to be wired correctly and your safety comes first.

Definitely a case of getting someone in to do this part of the fix. It's not a big deal for someone who knows but never worth taking chances with something that bites back.
What you need is not really a household electrician - more like someone who works on Hi Fi or older type TV's, radios repair etc. As all the correct ports are already on the transformer it would take him about 10 mins to do and you would know it's right.

I very much appreciate the help! Unfortunately I need to take baby steps...mechanical slot machines I’ve pretty much mastered but this electrical stuff is like learning Chinese for me. Lol
Anyway, I tested the volts (red and black wires) after the transformer in this area (in photo) and it was approximately 120. Isn't that after the transformer?

No, that’s the INPUT to the transformer primary, which in your case is 120v.
The output or the secondary is shown at the bottom of the transformer.
What’s needed is that the transformer primary has to be adapted to take 120v. At the moment it’s set up to take 240v. As you're only putting 120v in you are only getting about half the expected voltage out.
If you look at the transformer where the black and red cables are you will see 8 different taps or connections. These taps have to be configured in a different way for each type of mains input voltage. Look at the schematic and you will see the setting for 120v.

Actually the setting you need is the 110v in your schematic.

OK I'm starting to "get it" now. So I need to run a new cable (old one is spliced and old anyway) from the outlet to the transformer utilizing the correct volts indicated on the transformer right? I think I'd like to try it myself. If I took a close up of the schematic and the taps on the transformer - could you point out where to attach the new wires? Don't worry, I wont blame you if I light myself up.
